HY-KURE®

Potassium bromate is a unique compound widely used to “mature,” “condition” and/or “cure” wheat flour dough during the baking process.

  • REPCO® BRO HY-KURE® N-21 is a premix containing about 21% potassium bromate which when mixed with wheat flour at a dosage of one gram per hundred weight adds 5.0 ppm.
  • REPCO® BRO HY-KURE® N-50 is a premix containing about 50% potassium bromate which when mixed with wheat flour at a dosage of one gram per hundred weight adds 11.4 ppm.

The maximum level of potassium bromate which may be added is regulated in the U.S.A. and many other countries. In the U.S.A. this level is 50 ppm.
